thank you, people who come up with these holidays

over the weekend i learned sunday was national dessert day!
soo. it just felt sort of necessary to celebrate the occasion
and that's exactly what we did
with a liiiiittle late night baking of
chocolate chip coconut walnut bars to ring it in actually

and a taste testing of course
and a little more taste testing that afternoon and evening
...for celebration purposes

not sure who creates these little 'holidays'
but i'm really pretty happy they exist
and for austin
because he is usually the one i pawn sweets like these off on
and to take home and forever leave my kitchen
... until the next time

ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup shortening
  • 2 cups brown sugar (packed)
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 1/2 cups semisweet chocolate chips
  • 3/4 cup chopped walnuts
  • 1/2 cup shredded coconut

directions
1.  preheat oven to 350, grease a 9x13 baking pan
2.  in large bowl, combine shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder and salt. mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread mixture into pan
3.  bake 20 to 25 minutes
